Over the past few years many mixologist have turned to the back of the house, the chefs, for inspiration and advice into a deeper culinary understanding. Obviously this is evident by the term "Bar Chefs", which seems to be a widely utilized term amongst publications. But do people really understand what this means? Well we do! It's the future of mixology.
This is a hands on seminar that features guest Chef Peter Smith from PS 7's restaurant, and Gina Chersevani, mixologist. Attendees will gain a rich knowledge of how to grasp the concept of balance and harmony between the plate and the glass, and how to translate that into a menu that patrons will not only understand, but will LOVE! We as a team will demonstrate unami (the fifth sense), and how to achieve it with uncommon uses of spices and spirits. The attendee's would actually have a chance to taste some pairings and work on their own. This is a hands on seminar, there will be spice, food, cocktail, tasting. There will also be a secondary part of the class, the lighter side, of how to cater to those patrons who are calorie conscience and how to entice them with amazing food and beverage without sacrificing taste.
Chef Peter Smith and Gina Chersevani have been working together on this concept and have gained a lot of recognition for the their work not only from brands, such as Square One, Plymouth, Balvenie, Hendricks, Bluecoat, Del Maguey, and Grand Marnier, but also by local and national publications, such as the Washington Post, Washingtonian Magazine, Tasting Panel, Wall Street Journal, Flavor, etc. PS 7 also launched, "Our Revolution is your Resolution", a lo-cal drink menu, that has been widely received and partnered with VIDA fitness. On their menu at PS 7's they have a seven course, seven cocktail tasting menu which has created quite the stir amongst Washingtonian's and will be featured on the cover of the Washington Post food section on March 3rd.
