Oxidation of spirits can be a blessing or a curse. With certain ingredients, the oxidation process can develop wonderful flavours and in other cases it can create rancid flavours. Sometimes oxidation can produce both, at different times. Understanding how oxidation works can add another tool to a drink mixers toolbox and improve the development of aged cocktails, as well as opening up new areas for drink development. Bottle and barrel aging are examples of this process, but you can also add heat and time which can create an wide array of flavours. This session will demonstrate different methods of oxidation and how they can be used to create unique drinks.
